Amuse Bouche

Course One

Salmon & Brioche

Charred brioche topped with cured salmon, caviar and crème fraiche, drizzled with truffle honey

Course Two

Polenta alla Spianatora

Poured polenta meant to share in the traditional style, with wild boar ragu, Italian salsa verde, fresh cheese and grilled vegetables

Course Three

Involtino di Coniglio

Roulade of rabbit stuffed with herbs, served with grilled scallions and savory carrot cake

Intermezzo

Fruit sorbet with and emulsion of baby greens and feta snow

Course Four

Red Wine Chocolate Cake

Served with berry coulis and balsamic chantilly cream
